  • 1 lb ground chicken not extra-lean
  • 4-6 cloves fresh garlic minced
  • 1 cup Parmesan cheese freshly grated, divided
  • 1 cup breadcrumbs plain or Italian-seasoned
  • 2 large eggs
  • 1 medium onion diced
  • 2 tbsp soy sauce low-sodium preferred
  • 1 tsp salt
  • 1 tsp black pepper

Method
 

  1. Preheat oven to 375°F. Lightly grease a baking dish with nonstick spray.
  2. In a skillet over medium heat, sauté diced onions until soft and translucent, about 5 minutes. Let cool slightly.
  3. In a large bowl, combine ground chicken, cooled onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half the Parmesan. Mix gently but thoroughly until just combined.
  4. Transfer mixture to prepared baking dish and shape into a loaf. Sprinkle remaining Parmesan over the top.
  5. Bake for 45-50 minutes until internal temperature reaches 165°F. Let rest 10 minutes before slicing.
