Simple Loaded Breakfast Skillet

Crispy hash browns, bacon, sausage, peppers, onions, eggs and melted cheese in one cast iron skillet complete breakfast for four in 30 minutes.

Ingredients
  

Base
  • 4-6 strips bacon cut into 1-inch pieces
  • 20 oz refrigerated hash brown potatoes or 3-4 cups frozen
  • ½ cup sweet onion diced, optional
  • ½ cup red bell pepper diced, optional
  • 8-10 cooked sausage links chopped
  • salt and pepper to taste
Eggs & Cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese
Toppings
  • sliced green onions
  • diced tomatoes
  • sliced avocado
  • jalapeño slices

Equipment

  • Large cast iron skillet or nonstick skillet
  • Spatula
  • Lid for skillet

Method
 

  1. Cook bacon pieces in large cast iron skillet over medium heat until crispy. Remove bacon; leave fat in pan.
  2. Add hash brown potatoes to bacon fat. Cook stirring occasionally until golden and tender, 8-10 minutes.
  3. Add diced onion and bell pepper. Cook until softened, about 5 minutes. Stir in chopped sausage and bacon. Season with salt and pepper.
  4. Create 4 wells in hash mixture. Crack one egg into each well.
  5. Cover skillet. Cook over medium-low until egg whites set but yolks runny, 8-10 minutes.
  6. Sprinkle cheese over top. Cover briefly until melted. Serve immediately with toppings.

Notes

Use cast iron for crispest results. Pre-cooked sausage saves time. Best eaten fresh.
